Online,
Spaghetti for breakfast? Yes, please. The Library is happy to welcome back The Haitian Croissant for another edition of Napsnacks. In celebration of Haitian Flag Day, chef and blogger Ayida Solé will demonstrate and walk us through Hatian Spaghetti.
Haitian Spaghetti is subject to many variations and is often prepared according to the ingredients available at the time. Its flavor is rich with fresh vegetables, herbs, and different kinds of meats. In general, hot dog sausages or herring are used in this recipe but may be substituted for other proteins or vegetables.
Ingredients:
1/2 of a roasted spaghetti squash (roasted in the oven with 1 tbsp of drizzled olive oil) cooked for 30 min at 375 degrees (regular spaghetti can be substituted)
3 Kosher hot dogs (or any vegan alternative)
1 bell pepper
2 tbsp of tomato paste
1 tsp of salt
1 tsp of black pepper
2 tbsp of Haitian Epis or Green Seasoning
1/2 of a red onion
3 cloves of garlic
1 sprig of thyme
Optional: 1/2 of a scotchbonnet pepper
