Trainer: Irene Shiang Li of Prep Shift and MeiMei Dumplings

Description: Ingredient selection and food cost are things all restaurant owners can control and improve. Upgrading ingredients and reducing waste go hand-in-hand to maintain and even improve restaurant profitability. Topics covered will include: working with local farms, how to substitute to maximize sustainability and quality, and strategies for reducing business waste.
